Go to the Grand Canyon.. its right next door in Arizona… you can drive there and stay cheaply in Williams Az, about an hour south of the canyon. If you’ve never seen it, it will take your breath away. I only have one regret about moving to Australia and that is I will probably never see the canyon again… *sigh*

It would depend on where you living CA (Northern or Southern) and how long of a vacation you would like to take.
The websites below are pretty cool. I especially like the roadside America. =)

There are indeed lots of places to go in California. Can I assume you are going to Southern California (Los Angeles area perhaps)?
I am sure the kids will enjoy Universal Studios and the old-reliable Disneyland. Going further south, the zoo in San Diego still offers the best (in my humble opinion) collection of animals around. Of course, the Sea World is also in San Diego.
Somewhere between Los Angeles and San Diego (along Interstate 5) is Legoland. I forgot the exit to Legoland but you certainly will not miss it as long as you pay attention to the signs!!!

Living in SoCal,
I would say to take a trip at Knott’s Berry Farm (a theme park). It’s much smaller than Disneyland, and less costly.
I agree that a drive to the Grand Canyon is an excellent idea. Stay at the South Rim and do a day hike into the canyon. Take plenty of water for the hike. Hike down to Indian Gardens and back to the top of the South Rim. It is not too difficult and the kids should love it. I stayed at the Moquoi Lodge.
