For California, go to Napa Valley, San Francisco, and if you can, Yosemite National park. That would cover the very best of California. In New Mexico, I would go to Santa Fe, and Albuquerque and Carlsbad caverns.

Depends on what you like. Disneyland and Knotts Berry Farm, Marine World, Forest like Yosemite Ntl. Park, or the Redwood Forest in Northern Calif.? See there are five right there.
If you go to Water World in San Diego, or the San Diego Zoo, may as well go to the San Ysidro border crossing and check out Mexico. Park and walk across the border and back. Be sure to check on Passport / ID requirements. They are going to change soon.
In northern California there is the giant Shasta Lake Reservoir. Rent a house boat and sail around for a few days or weeks. Nearby Mt. Shasta for hiking and skiing.
Fishermans wharf in San Fransisco for food and shopping. Jack London mall across the bay in Oakland. Don’t forget the Golden Gate Bridge.
North of SF is the wine country. Tour some vineyards and sample the wares produced at each one.
Catalina Island for scuba diving and sail boats.
That’s about all California has to offer.

New Mexico–Santa Fe has some great art, unique scenery, and good food.
California–We have spent a lot of time in the Central Coast area: Pfeiffer Redwoods Park, Big Sur, Hearst Castle, Morro Bay, Cayucos, wineries, and the fun little Danish town (Solvang)
Further north: Redwood National Park (we saw hundreds of Roosevelt elk in this temperate rain forest)
Near our home: Laguna Beach is very scenic and full of art galleries and boutiques for the shopper
