Does a subtenant have the right to see the contract signed by the tenant and the landlord?
I live in Redwood City, CA. There was no contract signed between the tenant and the subtenant. I understand the subtenant is bound to the tenant the same way the tenant is bound to the landlord. Given this, should I be able to see that contract? What provision states this?
What happens if I discover that he is not supposed to sublet the apartment per his contract?

Yes you have the right, but that doesn’t mean that they will show you. You may verywell see that the premises may not be approved for subtenant. Sounds like you may be burning your own bridges.

You do not have a right to see the contract. If you are very concerned that the tenant is violating his agreement with the landlord then you should contact the landlord directly to see if subletting is allowed. Most rental contracts prohibit subletting and those that do allow it usually require approval by the landlord of the subletting tenant. You are right to be concerned.
Your contract is between the tenant and yourself. The tenant is under no legal obligation to allow you to see his contract with the landlord. There is not state provision for this…it is common contract law.
